Healing Turmeric Cauliflower Rice Bowl

This Healing Turmeric Cauliflower Rice Bowl is packed with nutrients and fiber making it the perfect buddha bowl to serve anytime of year, day or night.

Ingredients

  • 8 large cauliflower florets previously roasted
  • 1-2 teaspoon ground turmeric
  • 2 cloves garlic
  • 20 cherry tomatoes chopped in half
  • 1 avocado chopped
  • 2 carrots peeled with vegetable peeler
  • 1 small bushel of spinach rinsed and patted dry
  • 4 green onions chopped
  • 20 pomegranate seeds for garnish
  • pinch of sea salt and pepper to taste

Instructions

  • Add cauliflower florets, garlic, turmeric, sea salt and pepper to taste to food processor. Pulse just until the florets are coarsely chopped. Use spatula to scrape sides. Avoid overprocessing as your cauliflower will turn to mush.
  • Line two large bowls with spinach leaves. Top spinach leaves with cauliflower rice and rest of vegetables. Serve immediately with your favorite dressing and some warm, crusty bread.
