Healthy Chocolate Chip Cookie Dough Bites (Vegan, Gluten-Free)
These Healthy Chocolate Chip Cookie Dough Bites are Vegan, Gluten and Refined Sugar-Free and taste just like the real deal. Bet you can't eat just one!

Servings: 16 cookie dough bites
- 2 cups flour I used unbleached white
- ½ cup softened Vegan butter I used Earth Balance
- ½ cup packed organic light brown sugar
- ½ cup sugar in the raw
- ½ cup unsweetened almond milk
- ¾ cup Vegan chocolate chips
- 2 teaspoon vanilla
- ½ teaspoon fine sea salt
Add flour and Vegan butter to mixing bowl. Using a stand or hand mixer, beat for 2 minutes until the butter is well distributed in the flour. Add the sugars, vanilla, chocolate chips and sea salt. Continue beating while folding in the almond milk a little at a time. Use a spatula to scrape the sides.
Line a baking sheet with parchment paper. Spoon out about a tablespoon for each bite and roll into a ball. Place on baking sheet and refrigerate for 20 minutes before serving. Should make 16 bites per batch.
