- 1 cup vegan butter I use Earth Balance
- 0.5 cups vegan powdered sugar recipe below
- 1.5 teaspoon vanilla
- 0.5 teaspoon sea salt
- 0.75 cup almonds blended to fine grain
- 1 tablespoon arrowroot powder or tapioca flour for vegan powdered sugar
Preheat oven to 350 degrees Fahrenheit. In large mixing bowl, cream butter until light.
Add powdered sugar and cream together until well-blended.
Sift flour and salt together. Add to creamed mixture and blend thoroughly .
Stir in almonds.
Roll into small balls and place on parchment-lined baking sheet.
Bake for 15 minutes. Remove from oven. Allow to cool for 2 minutes. Dip in powdered sugar. Allow to cool completely and then dip in powdered sugar one more time.
